CWP Step 2 – Chicken Tikka Masala

So am currently on step 2 of CWP.  On Saturday as a treat I made chicken tikka masala with coriander cauliflower rice – it was truly delicious and something I will repeat.

The recipe is below.  A point to note I have a Thermomix which is a truly amazing machine and allows me to heat the spices and then grind them which gives a brilliant flavour and essentially helps in creating a paste. If you don’t have a thermomix get either a mortar and pestle or some other type of food processor as you want to grind the spices down and make a paste.

Ingredients:

  • 245g chicken breast (or other meat allowed on Step 2)
  • 20g root ginger sliced
  • 1 red chili
  • 1 spring onion
  • 80gs of cauliflower
  • 3 cloves of garlic
  • 5g each of cumin seeds, fennel seeds, coriander seeds
  • 5g of tumeric and black onion seeds
  • 10g of tandoori curry power
  • 20g fresh coriander
  • 150g of fat free plain yoghurt

 

Start by heating the different seeds – I did this in the thermomix for 5 mins.  Alternatively do in a frying pan on a dry heat for 5 mins at high.  Then add to a food processor and grind with the turmeric and tandoori curry powder for 30 secs.  Add in the ginger, garlic, chili and coriander by adding on to the running blades of the food processor.

By now you will have a fairly thick paste like mix.

Take the diced chicken breast and marinade in the mix.  Add in spoonful of the yoghurt.

Cover and place in the fridge, ideally all day or overnight for best flavour.

For the coriander cauliflower rice.

Take 80gs of cauliflower into a food processor (i used a thermomix) it does not look like much, I pulsed for about 45 seconds and it became like a rice / couscous texture and mixed through the coriander.

To Cook

Heat a frying pan on high then spray with Frylight.

Add in chicken that has been marinading, cook until chicken is white.

Add in 100mls of water this will start to look like a sauce.

Cover the chicken in the pan with a lid and allow to cook through as the water reduces.

Towards the end of cooking add in the rest of the yoghurt.

Meanwhile put the cauliflower rice into a microwave dish and cook on high for 3-4 mins stirring half way through.

Serve and enjoy.  In total in terms of calories it is about 350 calories.
